Almond-Coffee Crunch

Almond is a popular nut that is available for snacking in all Indian households. The Almond crunch is a simple dessert that can be eaten as it is or is popularly used as toppings in ice-cream, cake, chocolates and if you are feeling healthy, even cereal. This dessert can be stored in an airtight container and served as topping over any other dessert indefinitely.

We are giving the traditional almond crunch an exotic modern touch by making coffee the highlight of the desert. Here are all the simple ingredients you will need!

Ingredients -

2 cups of granulated sugar

1 cup of corn syrup

½ cup water

1 cup butter at room temperature

2 cups slivered blanched almonds

4 teaspoons of instant coffee granules

1 teaspoon baking soda

Here is how you can make the coffee-almond crunch in just 15–20 minutes-

Generously butter 2 jolly roll pans.

In a medium saucepan, combine the sugar, corn syrup, water, and butter. Melt over medium heat. Cook at 250 degree F on a candy thermometer or hard ball stage.

Add the almond and instant coffee and continue to cook to 280 degree F, or to the soft crack stage.

Remove the mixture from the heat and stir in the baking soda. Mix thoroughly till the syrup foams.

Divide it between the greased pan and spread the hot candy evenly with a metal spoon.

After it cools down, break the slab into pieces and store in an airtight container!
